Holy Cow!

Three quarters of a cow brought to us by Russ McCall of McCall vineyards in Cutchogue, NY. The cattle is of the historic Charolais breed originally from France and central Europe. We got one of the first available! Really excited to get into this one! Stay tuned to see where it all goes...
