People here smile often, and offer friendly hellos. Before long, I'll know all the residents by name. It's strange coming to a place like this, everyone seems so familiar and yet I hardly know a soul. I know with time it'll become more and more comfortable. Until then, I'm enjoying the wonder that comes with living in a new place.

Still some unpacking to do. Patio furniture will have to double as couches for now...

Literally steps from my front door. Hoping summer comes quick!
Had a bit of extra time on my hands today and was able to cook my first meal in the new place! This is the first time I've cooked in nearly a week. It felt good. Really good. Just reminded me how much I deeply care about food and what I'm doing out here.
You know me, I couldn't help but document it. Just a simple lunch of liver and onions - one of my favorites, and a great way to kick things off!
Caramelizing onions. Cooked em down with a little Peconic Bay verjus.
Bacon in a cast iron pan, doesn't get much better than that!
Pieces of calves liver soon to be seared in said bacon fat.
Topped it off with a slow cooked egg and some celery leaves. Awesome lunch!
*Still in the process of obtaining the apartment and plane tickets for Copenhagen. More to come on that adventure in the coming days...
